Ingredients
For the Salad
- ½ pound boneless, skinless chicken breasts
- 6 cups spring mix lettuce
- 1 cup fresh blackberries

For the Dressing

- 2 teaspoons Dijon mustard

Instructions
- Season the chicken with salt and pepper, then cook in a skillet or grill pan over medium heat for 5–7 minutes per side until fully cooked. Let it rest before slicing.
- Blend the blackberries, Dijon mustard, balsamic vinegar, olive oil, honey, soy sauce, salt, and pepper until smooth.
- Arrange the spring mix in a large serving bowl.
- Top with sliced chicken, fresh blackberries, avocado, red onion, and chopped walnuts.
- Drizzle the blackberry dressing over the salad.
- Toss gently and serve immediately.

- Toast the walnuts for extra flavor and crunch.
