  • 2 teaspoons Dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1 teaspoon soy sauce
  • Salt and black pepper, to taste

Instructions

 

  1. Season the chicken with salt and pepper, then cook in a skillet or grill pan over medium heat for 5–7 minutes per side until fully cooked. Let it rest before slicing.
  2. Blend the blackberries, Dijon mustard, balsamic vinegar, olive oil, honey, soy sauce, salt, and pepper until smooth.
  3. Arrange the spring mix in a large serving bowl.
  4. Top with sliced chicken, fresh blackberries, avocado, red onion, and chopped walnuts.
  5. Drizzle the blackberry dressing over the salad.
