This Berry Cheesecake features a buttery graham cracker crust, creamy vanilla cheesecake filling, and colorful swirls of fresh or frozen strawberries and blueberries for a fruity, marbled dessert.

Ingredients

Scale

Graham Cracker Crust

  • 1 3/4 cups graham cracker crumbs (200 grams)
  • 1/3 cup granulated sugar (66 grams)
  • 8 tablespoons unsalted butter, melted (113 grams)

Berry Swirls

  • 1 cup chopped strawberries, fresh or frozen (130 grams)
  • 1 cup blueberries, fresh or frozen (143 grams)
  • 2 tablespoons granulated sugar, divided (24.7 grams)

Cheesecake Filling

  • 24 ounces cream cheese, room temperature (678 grams)
  • 3/4 cup granulated sugar (148.5 grams)
  • 2 tablespoons all-purpose flour (7.5 grams)
  • 2 teaspoons vanilla extract (9.3 grams)
  • 3 eggs, room temperature

Instructions

  1. Combine the graham cracker crumbs, granulated sugar, and melted unsalted butter until evenly moistened.
  2. Press the graham cracker mixture evenly into the prepared cheesecake pan to form the crust.
  3. Prepare the chopped strawberries and blueberries separately, using the divided granulated sugar between the two berry mixtures.
  4. Beat the room-temperature cream cheese with the granulated sugar until smooth.
  5. Add the all-purpose flour and vanilla extract and mix until incorporated.
  6. Add the room-temperature eggs and mix until the cheesecake filling is smooth and cohesive.
  7. Pour the cheesecake filling over the prepared graham cracker crust.
  8. Add the strawberry and blueberry mixtures over the cheesecake filling.
  9. Gently swirl the berries through the filling to create a marbled effect without completely blending the fruit into the cheesecake.
  10. Bake and finish the cheesecake according to the recipe’s preparation until the filling is set and the cheesecake has the appropriate finished texture.
  11. Allow the cheesecake to cool and chill thoroughly before slicing and serving.

Notes

  • Use room-temperature cream cheese and eggs for a smoother cheesecake filling.
  • Fresh or frozen strawberries and blueberries can be used for the berry swirls.
  • Swirl the berries gently into the filling to preserve the distinct strawberry and blueberry colors.
  • Keep the finished cheesecake refrigerated and well covered.
