  • Author: Emmy Carter
  • Total Time: 35 minutes
  • Yield: 4–6 servings 1x

Description

Tender cod fillets coated in a warm blend of coriander, paprika, cumin, salt, and black pepper, then baked with fresh lemon juice, garlic, olive oil, and butter. Fresh parsley adds a bright finish to this simple and flavorful seafood dinner.

Ingredients

Scale

Cod

  • 1.5 lb cod fillet pieces, 4–6 pieces
  • 1/4 cup chopped fresh parsley leaves

Lemon Sauce

  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp melted butter
  • 5 garlic cloves, minced

For Coating

  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Combine the fresh lemon juice, extra virgin olive oil, melted butter, and minced garlic in a bowl. Stir until well combined and set aside.
  2. In a separate shallow bowl, combine the all-purpose flour, ground coriander, sweet Spanish paprika, ground cumin, salt, and black pepper. Mix thoroughly.
  3. Pat the cod pieces dry. Coat each piece evenly in the seasoned flour mixture, shaking off any excess.
  4. Arrange the coated cod pieces in a suitable baking dish or pan.
  5. Add the prepared lemon-garlic sauce according to the recipe, distributing the sauce around and over the cod.
  6. Bake until the cod is cooked through, opaque, tender, and flakes easily with a fork.
  7. Finish with the chopped fresh parsley and spoon some of the lemon-garlic sauce over the cod when serving.

Notes

  • Pat the cod dry before coating it so the seasoned flour adheres evenly.
  • Mix the flour and spices thoroughly to distribute the coriander, paprika, cumin, salt, and pepper evenly.
  • Cooking time can vary depending on the thickness of the cod pieces. Cook until the fish is opaque and flakes easily with a fork.
