Ingredients
Scale
For the Salad
- 5 ounces mixed baby greens (142 grams or 1 standard small clamshell)
- 2 medium honeycrisp apples, sliced or chopped (or apple variety of your choice)
- 1/2 cup dried cranberries
- 1 cup raw pecans (or walnuts)
- 1/2 cup gorgonzola, crumbled
For the Maple Dijon Dressing
- 1/4 cup olive oil
- 2 Tbsp maple syrup
- 2 Tbsp white wine vinegar (or apple cider vinegar)
- 2 Tbsp dijon mustard (use a mild, not spicy version)
- 1/2 tsp garlic powder
- Salt + pepper, to taste
Instructions
- Prepare the apples by washing them and slicing or chopping them into bite-sized pieces.
- Add the mixed baby greens to a large salad bowl. Add the prepared apples, dried cranberries, raw pecans, and crumbled Gorgonzola.
- Make the dressing by combining the olive oil, maple syrup, white wine vinegar, Dijon mustard, garlic powder, salt, and pepper in a small bowl or jar.
- Whisk the dressing until well combined, or seal the jar and shake thoroughly.
- Drizzle the maple Dijon dressing over the salad, adding it gradually to control the amount.
- Gently toss the salad until the ingredients are lightly coated with dressing.
- Serve immediately for the freshest greens and crispest texture.
Notes
- Use a crisp apple variety if substituting for Honeycrisp.
- Walnuts can replace the pecans in the same quantity.
- Apple cider vinegar can be substituted for white wine vinegar.
- For the best texture, keep the dressing separate until just before serving.
