Ingredients
Scale
Salad
- 3 apples, sliced very thin
- 5 oz arugula
- 1/4 cup red onion, sliced thin
- 1/2 cup figs, chopped
- 1/2 cup goat cheese crumbles
For the Maple Pecans
- 1 cup pecan halves
- 2 Tbsp maple syrup
- Pinch of sea salt
Dressing
- 1/2 cup olive oil
- 2 tsp maple syrup
- 1 tsp lemon juice
- 1 1/2 tsp Dijon mustard
- 1/2 tsp pepper
- 1 garlic clove, minced
- 3 Tbsp balsamic vinegar
- 1/4–1/2 tsp sea salt, or to taste
Instructions
- Prepare the maple pecans by adding the pecan halves, maple syrup, and a pinch of sea salt to a skillet or suitable pan. Cook while watching closely as the maple syrup coats the pecans. Remove from the heat and let the pecans cool completely.
- Slice the apples very thinly. Thinly slice the red onion and chop the figs.
- Add the arugula, sliced apples, red onion, chopped figs, and goat cheese crumbles to a large salad bowl. Add the cooled maple pecans.
- Prepare the dressing by combining the olive oil, maple syrup, lemon juice, Dijon mustard, pepper, minced garlic, balsamic vinegar, and 1/4 teaspoon sea salt. Mix thoroughly and add additional sea salt to taste, up to 1/2 teaspoon total.
- Pour the dressing over the salad and gently toss until the ingredients are lightly coated. Serve promptly.
Notes
- Slice the apples and red onion very thinly so they blend easily with the arugula.
- Let the maple pecans cool completely before adding them to the salad to help preserve their crunch.
- For the best texture, keep the dressing separate if preparing the salad ahead of time and toss just before serving.
