- ½ cup brown sugar
- ½ cup low sodium soy sauce
- 1–2 teaspoons minced garlic
- ¾ cup low sodium chicken broth
- 1½ cups uncooked instant white rice
- ½ cup diced red onion
- 1 red bell pepper, chopped
- 1 (20-ounce) can pineapple tidbits in juice, not drained
- 1 pound boneless skinless chicken breasts or chicken tenderloins, diced
- Optional: chopped cilantro
- Optional: diced cooked bacon
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Whisk together the brown sugar, soy sauce, garlic, and chicken broth.
- Stir in the rice, onion, bell pepper, pineapple with juice, and diced chicken.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Cover tightly with aluminum foil.
- Bake for 35–40 minutes, or until the chicken is cooked through and the rice is tender.
- Remove the foil during the final 5 minutes if desired.
- Let rest for 5 minutes before serving.
- Garnish with cilantro and bacon if using.
